Embracing the Concern: My Journey from Skeptic to Pellet Smoker User (not a Convert)

Change is seldom easy, especially when it comes to something as sacred as the art of barbecuing. For years, I scoffed at the idea of switching from my trusty charcoal grill and barrel smoker to a pellet smoker. The allure of smoky flavors, hard woods and grilling traditions ran deep in my veins. However, curiosity and the need to have access to a smoker when we downsized to RV Life eventually got the better of me, leading me to embark on a culinary adventure that would challenge some of my previous positions.

Tradition vs. Technology:

My initial (and probably still my biggest) reluctance stemmed from a deep-seated attachment to traditional grilling methods. I can’t help it; I suppose. I am a traditionalist; likely in more ways than I even prefer to acknowledge. But for sure I am a traditionalist when it comes to the art of grilling and smoking.

The rituals of lighting charcoal, monitoring the flame, cursing the wind when the elements messed with grill and smoker temperatures, and managing the airflow - All these things had become a comforting routine. Even setting multiple alarms; getting as little as 2 hours of sleep on the nights I smoke brisket, was comforting to me. The idea of surrendering this control to a high-tech pellet smoker left me skeptical and hesitant. Not to mention, I initially thought the pellet smoker was cheating a little.

Fear of Complexity: Pellet smokers, with their digital controls and automated features, seemed like overcomplicated gadgets designed for tech enthusiasts rather than serious grillmasters. The fear of struggling with intricate settings and complex operations made me question whether the convenience was worth the compromise on authenticity.

Doubts about Flavor: One of my biggest reservations centered around the taste. Could a pellet smoker truly replicate the authentic smokiness and flavor profile achieved with traditional methods? The doubt lingered as I questioned whether the convenience of a pellet smoker would come at the cost of sacrificing the soul-stirring taste of slow-cooked, charcoal-grilled perfection.

Uncertain Learning Curve: Learning to master a new cooking device can be intimidating. The pellet smoker's unfamiliar territory seemed like uncharted waters, and the prospect of investing time in understanding its nuances discouraged me. Would I be able to adapt quickly, or would the learning curve prove too steep for a seasoned charcoal griller like me?

Budget Concerns: The allure of pellet smokers came with a price, and I hesitated to invest in a new piece of equipment without a guarantee that it would live up to the hype. Balancing the desire for technological innovation with budget constraints added another layer of complexity to my decision-making process.

Despite my initial reservations, stepping into the world of pellet smokers turned out to be a welcome revelation. They are tucked away securely while I live RV Life. But for now, I can appreciate the ease of the pellet smoker and still get my grilling/smoker fix in.
